Vegan Impossible scalloped Potatoes!

I am excited to share with you my vegan impossible scalloped potatoes! It is the most amazingly delicious comfort food perfect for the holiday season, for vegans and non-vegans alike!

INGREDIENTS

Serves: 8 Course: Main Course Prep time: 30 minutes Cook time: 45- 50minutes

Total time: 1 hr. 15 minutes Cuisine: Vegan Haïtian, Caribbean.


· 2 chopped onions

· 4 - 5 Idaho Potatoes

· 8 oz Impossible Foods Plant based spicy sausage

· ¾ cup chopped peppers red, green, or yellow (as desired)

· 2 tbsp chopped garlic

· 1 tsp all-purpose seasoning

· ¼ tsp ground pepper

· 2 Tbsp mushroom powder (recommended but optional)

· 3 Tbsp nutritional yeast

· 1/2-3/4 cup grated plant-based parmesan cheese

· 1/2-3/4 cup grated vegan mature cheddar cheese

· 1 ¼ cup plant-based milk

· ¼ - ½ cup of all-purpose flour

· 1 stick of vegan butter (8 Tbsp)

· 2 Tbsp of fresh chopped parsley

· 1 tsp of thyme

· 1/4 tsp of cloves powder.

· A few drops of your favorite hot sauce (Optional)


NOTES

This recipe is easy to put together yet so delicious. It will be helpful to prepare the cheese sauce, and then the impossible grounds. Once completed and the potatoes scalloped. It will be a simple process of layering potatoes, cheese sauce and impossible ground. Begin with a layer of cheese sauce and finish with a layer of impossible ground, topped with cheese sauce and cheese. Feel free to use your favorite vegan cheese, grounds. Great substitutes for the impossible grounds are lentils, mushrooms, TVP, or protein grounds from other vegan or plant-based brands such as Beyond, Gardein to name a few. Violife, Myokonos and Chao are my top recommend vegan cheese brands and Earth Balance or country crock the best baking/cooking vegan butters.


INSTRUCTIONS

1. Scallop your potatoes

2. Chop the peppers, onions, thyme, and parsley

3. In a pan, melt the butter

4. Add the garlic and sauté until cooked

5. Add the peppers and cook thoroughly

6. Add the chopped onions

7. Add the all-purpose seasoning, ground pepper, mushroom powder, nutritional yeast until the onions are translucent and cooked through

8. Alternate between the plant-based milk and flour, stir, and cook.

9. Finish with the flour

10. Add the plant-based cheese, mix and finish cooking.

11. Remove from heat and let it cool

12. In a pan, sauté the garlic

13. Add ¼ cup onions and peppers

14. Cook for 3-5 minutes (until translucent)

15. Add in the impossible grounds

16. Season as desired with the all-purpose seasoning, cloves powder, mushroom powder, parsley, thyme, and a dash of hot sauce (*optional)

17. Add 1-2 Tbsp of plant-based milk if the mixture is too dry (optional)

18. Finish cooking.

19. Preheat your oven to 350-375°F

20. In an oven safe dish began to layer the scalloped potatoes, the cheese sauce, and impossible grounds.

21. Begin, finish and top as per the notes.

22. Sprinkle additional plant-based cheese as desired

23. Bake at 375 °F for 40-45 minutes until the potatoes are all cooked through, and the cheese form a beautiful crust.

24. Once cooked, remove from the oven, cool, serve and enjoy!
